Ettienne Van Vrede

Ettienne Van Vrede

Ettienne studied Hotel Management at the Cape Town Hotel School in Granger Bay, in his native South Africa, where he graduated top of his class. After gaining experience in renowned world class hotels such as the Radisson Cape Town and Hunters Country House, Ettienne decided to make the move to Ireland and joined the team at Hayfield Manor in May 2003. Ettienne held the role of General Manager at Hayfield Manor for 10 years. A desire to provide guests with service that exceeds their expectations is what drives Ettienne and has led him to his current position of CEO of The Hayfield Collection. Hayfield Family Collection encorporates the Scally family's 3 properties, Hayfield Manor in Cork, The Malton Killarney and Killarney Royal.

Ettienne is constantly searching for new ideas and methods to ensure that guest satisfaction is maximised. For Ettienne, our collection of properties are not simply hotels, but are a home away from home. He delights in meeting with guests personally, and in doing his utmost to make their stay memorable.

When he is not working, Ettienne enjoys spending time with his wife, Annemarie Scally and his daughters, Marie Claire & Annabelle, who keep him very busy. He also enjoys gardening, when the weather permits!

Annemarie Scally

Annemarie Scally Annemarie is the eldest daughter of Joe and Margaret Scally. Having been immersed in the hotel industry from an early age, Annemarie took up the position of Deputy Manager at Hayfield Manor in 2006. Prior to that, she earned a degree in Interior Design and managed her own business AMS Interior Design. 

Taking on the role of designer for several projects throughout the hotel, such as Perrotts Garden Bistro, Orchids Restaurant and The Beautique Spa, Annemarie found she enjoyed working with the team and welcoming guests. Annemarie’s design training means she has a constant eye on the look and feel of Hayfield Manor.  Annemarie is also responsible for the design in the Scally family's other two properties, The Malton Killarney and Killarney Royal.  In her free time Annemarie enjoys spending time with her husband Ettienne and daughters Marie Claire & Annabelle.

TJ Mulcahy

General Manager
TJ Mulcahy TJ Mulcahy is a proud Kerryman. TJ's passion for hospitality developed from working as a teenager in summer jobs in hotels throughout the picturesque town of Killarney. He completed his honours degree in Hotel Business Management that also included a one year apprenticeship at the five star Adare Manor Hotel & Resort. Following his studies, and with the prospect of learning more about our business, he moved to London in May 2000 to put all his good theory into practice. TJ decided to “go large” and his first role was Assistant Reception Manager at the Hilton London Metropole with 1060 bedrooms, followed by Front office Manager at the Novotel London West with 630 bedrooms. He joined the Red Carnation hotel (RCH) team in 2004, as Rooms Division Manager at their Montague on the Gardens hotel. He returned home to Ireland in 2007 to become Deputy General Manager at the five star Ashford Castle. TJ is delighted and honoured to lead the team at Hayfield Manor and support all our team members in the achievement of our ambition; to provide our guests with an experience Beyond the Best.

Lisa Leahy

Sales & Marketing Director - Hayfield Family Collection
Lisa Leahy

Lisa graduated from Shanon College of Hotel Management and completed her Masters degree from Middlesex University. She worked in the UK for 11 years in various sales roles including Sales Director at the Forte Crest Heathrow and at the Shaw Park Plaza in central London, before joining the team at Hayfield Manor in 2007 as Director of Sales & Marketing.  Lisa now leads the Sales & Marketing teams of the Hayfield Family Collection which incorporates Hayfield Manor in Cork, The Malton Killarney and Killarney Royal hotels. 

Lisa is especially interested in online marketing, revenue management and particularly enjoys long term relationships with our key partners and customers. 

In her free time Lisa enjoys spending time with her family, reading good books and learning new things.

Karen Fleming

Sales Director - Hayfield Manor
Karen Fleming Karen holds an honours degree in Hotel & Catering Management from GMIT. She has recently complemented her educational achievements by graduating top of her class with a first class Masters in Management & Marketing from neighbouring UCC.

A passion for travel has granted Karen the opportunity to combine career and culture with many years spent working in reputable and award winning establishments both at home and abroad.

Upon relocating back to her native Cork in 2010, Karen was delighted to join the team at Hayfield Manor.  A love of meeting people and a genuine desire to provide guests with an exceptional service encounter makes Hayfield the ideal work environment. Karen considers it “an inspiring experience to work in such a beautiful property and with a team of like-minded hospitality enthusiasts”.

When not planning foreign adventures, Karen loves to ski, read, dine out and catch up with family and friends.

Rachel Walker

Corporate Sales Manager
Rachel Walker

Rachel Walker is the Corporate Sales Manager for Hayfield Manor, Killarney Royal and The Malton Killarney. She loves the individuality that each of the three properties has to offer.

Rachel holds a Bachelor degree in Tourism Studies, a postgraduate certificate in Information Technology, and a certificate in Life and Business Coaching. She has worked in the Grand Place in Brussels, Belgium in the Office of Promotion of Social Tourism and Atlantic Golf and also worked in European Travel Management in Westport in Connecticut in The United States.

After promoting Ireland and Scotland abroad for Golf and Group Tours, she returned home to Irish soil and started her Irish Tourism career in Tour Operators, working with Abbey Tours in the Conference and Incentive department and Brendan Tours.

Rachel was then offered the opportunity to work for a number of excellent Irish hotels; these included the original nine Great Southern Hotels, Druids Glen Hotel in Wicklow for seven years and more recently for nearly three years The Dylan Hotel, Dublin. Rachel also won Network Dublin Business Woman of the Year in 2014 which is a tremendous achievement. 

She loves welcoming new clients and nurturing the existing relationships that all three hotels have within the corporate and the meeting and incentive agent market.

I enjoy meeting clients and building relationships with them. I find my role greatly satisfying as I love when people are delighted when they have made that final decision to choose us. I love being part of a hardworking team and enjoy the variety and opportunity that comes with this role.”

Rachel loves meeting and talking with people and clients in person and building relationships with them. Rachel has developed a great portfolio of clients that increases every year in different market segments. Rachel travels domestically within Ireland and also internationally to meet incentive and conference partners. Rachel has a wealth of experience working with clients who require different events in different venues.

In her spare time, when not entertaining her two boys Jack and Ralph, Rachel loves to garden, cook a family meal and walk along the beach in her native County Wicklow.

Laura Davidson

Human Resources Manager

Laura discovered hospitality upon leaving school, where she completedsome training in Bar management and work experience over in Bristol, UK. She worked her way up through Food & Beverage operations with Jurys Doyle Group, acrossthe UK, to Deputy General Manager, completing many development courses alongthe way. In 2011, she took the opportunity to move into HR Management, still within the Jurys Inns Group, where she looked after teams in Brighton, Southampton, Birmingham andDublin, before joining the 4 star Clontarf Castle Hotel to manage HR for a teamof 120 people. 

The draw back home to Cork was always in the back of her mind, and in 2017 an opportunity to join the Hayfield Family collectionpresented itself. Since joining Hayfield Manor Hotel, she is delighted to be ableto be a part of our amazing team and support all in achieving their best! 

Tanya Mansfield

Spa Manager
Tanya Tanya studied in Cork College of Commerce for 4 years. She started with a Complementary Health course and following this she went on to study Beauty Therapy, where she achieved great success and won Student of the Year in her final year of studies. Tanya began working in Hayfield Manor as a part time therapist while also working in Castlemartyr Resort. College needed to take precedence, thus Tanya opted to leave Hayfield Manor for a brief period to concentrate on her studies. Thankfully, Tanya decided to come back and join us in November 2014 and ever since she has been doing a fantastic job as Spa Manager at The Beautique Spa where she loves to work each day.
In addition to managing a busy and buzzing spa, Tanya’s other key passion in life is travelling. Tanya is a firm believer in positive thinking and likes to bring this attitude to work with her to motivate her team and welcome guests with a smile

Sandra Biret-Crowley

Resident Sommeliere
Sandra-Biret Crowley is the Resident Sommeliere at Hayfield Manor. Sandra developed a passion for serving wine at an early age. She studied a four year hotel management course in her native France and soon recognised that, while she thoroughly enjoyed all aspects of restaurant service, it was in the area of wines that she truly excelled and had a real passion for. When she had completed her hotel qualifications, she took the initiative to carry out a year-long apprenticeship at a local vineyard, Domaine Dhommé in Chalonnes Sur Loire. After spending twelve months there, Sandra built up a wealth of knowledge and graduated with a Sommeliere’s Diploma. Sandra then decided it was time for a change and in a quest to improve her English and experience the world of hospitality in Ireland, she decided to come to Cork. Her new journey began with a year’s work placement at Hayfield Manor in 2004. During this time, on St. Patrick’s Day 2005 to be precise (!), Sandra met and fell in love with Cork native, Gary. Following a brief 8 month stint back in France, Sandra returned again and headed to Dromoland Castle in May 2006, initially fulfilling the role of Chef de Rang but soon advancing to that of Sommeliere. In 2009, Sandra made the move to Castlemartyr Resort and stayed there until August 2011 before she returned to Hayfield Manor once again as Resident Sommeliere. Sandra is very settled here now with her husband Gary and two beautiful daughters, Caline & Adeline.

Sandra has said that the thing she loves most about wines is that every year is different and brings new possibilities, especially with old world wines. She says that certain years are universally acknowledged as great years for wines, such as ‘89/’90, while others are reflected upon in dismay as bad years including ‘84/’86. Sandra also loves new wines and she is very interested in the advances in the production of better wines from regions such as Argentina, South Africa and New Zealand.

When asked about her most memorable wine experience, Sandra often reflects on the wonderful opportunity that allowed her to taste and serve an exquisite bottle of Burgundy, costing over €1,000! However Sandra says that on a more affordable scale, a nice Burgundy wine is her go-to treat but she also delights in the opportunity to try new wines from across the globe and to share her knowledge with guests and friend alike. That’s what makes her job as a Sommeliere so interesting – there is no finite knowledge that one can acquire about wines as there is an endless supply of new wines waiting in the wings to be learned about, sampled and enjoyed! Sandra is an incredible asset to the team as guests love to hear all the knowledge that she has to share.

John Richardson

Bar Manager

Service with a smile is guaranteed in The Manor Bar, with John and his team on hand throughout the day. John has been a member of the Hayfield Manor team since the doors first opened in 1996 - he is now part of the foundation! Prompt and efficient service, and always happy to spend time conversing with guests, John is very popular with guests.
