We would like to introduce you to the team members who will be looking after you during your stay.

Ettienne Van Vrede

Ettienne Van Vrede

Ettienne studied Hotel Management at the Cape Town Hotel School in Granger Bay, in his native South Africa, where he graduated top of his class. After gaining experience in renowned world class hotels such as the Radisson Cape Town and Hunters Country House, Ettienne decided to make the move to Ireland and joined the team at Hayfield Manor in May 2003. Ettienne held the role of General Manager at Hayfield Manor for 10 years. A desire to provide guests with service that exceeds their expectations is what drives Ettienne.

Ettienne is constantly searching for new ideas and methods to ensure that guest satisfaction is maximised. For Ettienne, our collection of properties are not simply hotels, but are a home away from home. He delights in meeting with guests personally, and in doing his utmost to make their stay memorable.

When he is not working, Ettienne enjoys spending time with his wife, Annemarie Scally and his daughters, Marie Claire & Annabelle, who keep him very busy. He also enjoys gardening, when the weather permits!

Annemarie Scally

Annemarie Scally Annemarie is the eldest daughter of Joe and Margaret Scally. Having been immersed in the hotel industry from an early age, Annemarie took up the position of Deputy Manager at Hayfield Manor in 2006. Prior to that, she earned a degree in Interior Design and managed her own business AMS Interior Design. 

Taking on the role of designer for several projects throughout the hotel, such as Perrotts Garden Bistro, Orchids Restaurant and The Beautique Spa, Annemarie found she enjoyed working with the team and welcoming guests. Annemarie’s design training means she has a constant eye on the look and feel of Hayfield Manor.  Annemarie is also responsible for the design in the Scally family's other two properties, the Great Southern Killarney and Killarney Royal.  In her free time Annemarie enjoys spending time with her husband Ettienne and daughters Marie Claire & Annabelle.

Rachel Walker

Rachel Walker

Rachel Walker is the Corporate Sales Manager for Hayfield Manor, Killarney Royal and the Great Southern Killarney. She loves the individuality that each of the three properties has to offer.

Rachel holds a Bachelor degree in Tourism Studies, a postgraduate certificate in Information Technology, and a certificate in Life and Business Coaching. She has worked in the Grand Place in Brussels, Belgium in the Office of Promotion of Social Tourism and Atlantic Golf and also worked in European Travel Management in Westport in Connecticut in The United States.

After promoting Ireland and Scotland abroad for Golf and Group Tours, she returned home to Irish soil and started her Irish Tourism career in Tour Operators, working with Abbey Tours in the Conference and Incentive department and Brendan Tours.

Rachel was then offered the opportunity to work for a number of excellent Irish hotels; these included the original nine Great Southern Hotels, Druids Glen Hotel in Wicklow for seven years and more recently for nearly three years The Dylan Hotel, Dublin. Rachel also won Network Dublin Business Woman of the Year in 2014 which is a tremendous achievement. 

She loves welcoming new clients and nurturing the existing relationships that all three hotels have within the corporate and the meeting and incentive agent market.

I love being part of a hardworking team and enjoy the variety and opportunity that comes with this role.”

Rachel loves meeting and talking with people and clients in person and building relationships with them. Rachel has developed a great portfolio of clients that increases every year in different market segments. Rachel travels domestically within Ireland and also internationally to meet incentive and conference partners. Rachel has a wealth of experience working with clients who require different events in different venues.

In her spare time, when not entertaining her two boys Jack and Ralph, Rachel loves to garden, cook a family meal and walk along the beach in her native County Wicklow.

Evander Brennan

Evander began his hospitality career without realising it while growing up in a country pub at home in South Sligo. He then went on to study Bar Management in Galway Mayo Institute of Technology. While in college, he worked in the Sligo Park Hotel. Upon obtaining his college degree, he moved on to the World renowned 5-star Ashford Castle in Co Mayo. While working in Ashford Castle, Evander progressed through the ranks and crafted his eye for service and detail in the 5-star environment. 

The idea of travelling became attractive to Evander and along his way he worked in a 5-star resort in Florida and the luxury of Seabourn Cruise Ships where he was able to balance his travelling and career hand in hand. Evander joined the team at Hayfield Manor in May 2018 as Food and Beverage Manager while most recently progressing to the role of Deputy General Manager. 
Evander still has a passion for travel and each winter he enjoys his annual skiing trip, and during the summer, if you cannot find Evander in Hayfield Manor, he is almost certainly somewhere in the ground of Pairc Ui Chaoimh watching anyone who is on show! 

John Burchill

John Burchill is our Operations Manager at Hayfield Manor.

John began his journey in hospitality many years ago working in properties such as Fota House & Gardens, The Royal Cork Yacht Club, The Farmgate Restaurant & Barnabrow House. John is a proud Cork man and is a native of Aghada, East Cork.

John holds a degree in Culinary Arts & an Honours degree in Hospitality Management from Munster Technological University (Formally Cork Institute of Technology). John joined the team at Hayfield Manor in October 2013 and since then has held the positions of Bartender, Pastry Chef, Food & Beverage Server, Duty Manager, Conference & Banqueting Manager and most recently progressing to the role of Operations Manager.

His hobbies include Gaelic football, rowing, baking & the odd glass of wine. John has achieved tremendous success throughout his career so far. He lives for the 5 star experience and creating memorable experiences for our wonderful guests is his top priority.

Laura Davidson

Human Resources Manager

Laura discovered hospitality upon leaving school, where she completed some training in Bar management and work experience over in Bristol, UK. She worked her way up through Food & Beverage operations with Jurys Doyle Group, across the UK, to Deputy General Manager, completing many development courses along the way. In 2011, she took the opportunity to move into HR Management, still within the Jurys Inn Group, where she looked after teams in Brighton, Southampton, Birmingham and Dublin, before joining the 4 star Clontarf Castle Hotel to manage HR for a team of 120 people. 

The draw back home to Cork was always in the back of her mind, and in 2017 an opportunity to join the Hayfield Family Collection presented itself. Since joining Hayfield Manor Hotel, she is delighted to be able to be a part of our amazing team and support all in achieving their best! 

Tanya Mansfield

Spa Manager
Tanya Tanya studied in Cork College of Commerce for 4 years. She started with a Complementary Health course and following this she went on to study Beauty Therapy, where she achieved great success and won Student of the Year in her final year of studies. Tanya began working in Hayfield Manor as a part time therapist while also working in Castlemartyr Resort. College needed to take precedence, thus Tanya opted to leave Hayfield Manor for a brief period to concentrate on her studies. Thankfully, Tanya decided to come back and join us in November 2014 and ever since she has been doing a fantastic job as Spa Manager at The Beautique Spa where she loves to work each day.
In addition to managing a busy and buzzing spa, Tanya’s other key passion in life is travelling. Tanya is a firm believer in positive thinking and likes to bring this attitude to work with her to motivate her team and welcome guests with a smile

John Richardson

Bar Manager

Service with a smile is guaranteed in The Manor Bar, with John and his team on hand throughout the day. John has been a member of the Hayfield Manor team since the doors first opened in 1996 - he is now part of the foundation! Prompt and efficient service, and always happy to spend time conversing with guests, John is very popular with guests.
