The story behind our anniversary menu begins with a treasured piece of Hayfield Manor history: an original wedding menu from 1996, gifted to the hotel by a guest.
Inspired by this keepsake, Executive Head Chef Mark Staples and his team have created a menu that looks back to where it all began while celebrating the exceptional local produce and supplier relationships that continue to shape the Hayfield Manor experience today.
Each course takes inspiration from the original 1996 celebration menu, reimagined for the present day with contemporary technique and the very best of Cork's produce. From Ballycotton smoked salmon terrine and a classic Caesar salad, to tender Irish beef cheeks Bourguignon and a wonderfully retro Baked Alaska, each course pays homage to the past while celebrating the very best of today.
